Fun Breakfast in Bed Ideas for Mother's Day

Mothers and mother figures do an enormous amount for their families—whether it’s making lunches in the morning, tucking the kids in at night after a long work day or serving as a one-person shuttle for music lessons and sports practice. This year, help your kids celebrate Mum or the mother figures in their lives, and show her just how much she’s appreciated. These three Mother’s Day breakfast in bed ideas are easy, quick and simple enough that the littles can join in. It’s also a great way for them to learn about food prep and basic kitchen skills—they can help design a menu, shop and do basic meal prep in a safe way.
Pancake Stack
Ingredients
- 1 cup flour
- 3 tablespoons sugar
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 1 large egg
- 1 cup milk of your choice
- 1 teaspoon vanilla or almond extract
- ½ cup pre-made white buttercream mixed with pink food coloring
Directions
- Mix dry ingredients together in one bowl. In a separate bowl, mix wet ingredients together.
- Combine the two bowls, mixing until smooth.
- Heat a skillet over medium-high heat, and add a tablespoon of butter or oil to grease the pan. Pour a quarter of the pancake mixture into the pan. Cook until bubbles stop forming at the top of the pancake, then flip the pancake. Cook until lightly browned. Repeat three times, using the remaining batter.
- Allow finished pancakes to cool for five minutes.
- Put buttercream in a piping bag. Place one pancake on a plate, and pipe buttercream in a circle along the edge of the pancake.
- Place another pancake on top, and add another ring of icing.
- Add the third pancake, top with a frosting ring, and then place the final pancake on top.
- Pipe a heart onto the middle of the top pancake, and serve the stack with a side of maple syrup.
Easy Egg Cups with Veggies
Ingredients
- 8 large eggs
- ½ cup spinach, chopped finely
- ½ cup chopped cherry tomatoes
- 4 tablespoons Italian seasoning
- 4 tablespoons grated parmesan cheese
- Salt and pepper to taste
Directions
- Preheat oven to 175°C. Spray eight silicone baking cups with nonstick spray.
- Crack eggs into a large measuring cup with a spout. Whisk the eggs into a froth.
- Carefully pour the eggs halfway up each baking cup.
- Allow finished pancakes to cool for five minutes.
- Put the spinach, tomatoes, seasoning and cheese into small bowls, and separate the ingredients as equally as possible among the egg cups.
- Season with salt and pepper.
- Bake for 15-20 minutes, or until set. For extra pizzazz, serve the egg cups in decorative cupcake liners.
PB and J Overnight Oats
Ingredients
- ½ cup rolled oats
- ½ cup unsweetened milk of your choice
- ½ cup crushed nuts of your choice (walnuts, almonds and peanuts work well)
- ½ cup sliced strawberries or grapes
Directions
- Combine the oats, milk and nuts in a container and seal it well. Shake the container to mix them together.
- Add the fruit on top of the mixture.
- Replace the lid, and store the container in the fridge overnight.
- In the morning, pour the oats into a microwave-safe bowl and heat for 30 seconds at a time until desired temperature is reached.
- Serve alongside a bouquet of flowers and a cup of coffee or glass of orange juice.
