Antipasto Salad

Serves 4

Salad Dressing

Ingredients

• 200ml extra virgin olive oil
• 50ml red wine vinegar
• Juice 1 lemon
• 1 clove garlic, finely grated
• ½ tsp dried chili
• 1 tsp dried oregano
• 2 tsp Dijon mustard
• Salt, pepper

Salad

Ingredients

• 1 radicchio, base trimmed
• 400g mixed leaves
• 1 punnet grape tomatoes, halved
• 200g cherry Bocconcini
• ½ cup pitted kalamata olives
• 1 cup preserved globe artichokes, halved
• ½ cup sun dried tomato strips
• Handful each dill, flat parsley roughly chopped
• Small piece parmesan, to serve

Method

1. Combine all the ingredients for the salad dressing and emulsify. Set aside.
2. Wash the leaves and spin dry, using and roughly chopping 1/2 the radicchio leaves. Reserve rest for another use.
3. Dry the bowl of the salad spinner and place the leaves in along with the remaining ingredients, except for Parmesan.
4. Dress with just enough dressing to coat well, season to taste and serve with Parmesan grated over!
