Cucumber and Honeydew Melon Salad

Ingredients
- ½ honeydew melon, peeled, seeded, and finely sliced
- 1 long cucumber, finely sliced into ribbons
- 125 g (4 oz) cooked edamame beans
- handful mint leaves
- 2 limes, juiced
- 1 teaspoon pure maple syrup
- 3 tablespoons extra-virgin olive oil
- ½ teaspoon matcha green tea
Method
- ARRANGE melon and cucumber ribbons onto a serving platter.
- SCATTER with edamame beans and mint leaves.
- COMBINE the juice of 2 limes with a little maple to sweeten, then drizzle in the olive oil and matcha to form an emerald-green emulsion. Taste and adjust where needed, adding more matcha or maple.
- DRIZZLE the dressing over the honeydew and cucumber ribbons before serving.
