Leafy Greens with Pecorino, Herbs, and Maple Vinaigrette

Packed with fresh crisp greens, sharp pecorino cheese, pinenuts, and sweet maple dressing this salad is perfect for any meal!
Salad
- 200g gourmet salad mix
- 10g fresh basil leaves
- 10g fresh mint leaves
- 10g fresh coriander leaves
- 40g pinenuts, toasted
- 120g pecorino pepato, with pepper corns
Dressing
- 60ml extra virgin olive oil
- 20ml maple syrup
- 1 (40ml) lime, juiced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Garnish
- Extra herbs
Method
- Wash and dry the salad mix in the OXO Salad Spinner. Repeat the process for the basil, mint, and coriander leaves. Set aside.
- In a salad dressing shaker, add olive oil, maple syrup, lime juice, mustard, salt and pepper. Secure the lid and shake the dressing well. Set aside.
- With a swivel peeler, peel the pecorino into shavings. Using the OXO Salad Spinner glass bowl to serve add the salad and herbs.
- Pour over the salad dressing just before serving with pecorino cheese shavings, pine nuts and seasoning. Serve with herbs on top.
