Leafy Greens with Pecorino, Herbs, and Maple Vinaigrette

Packed with fresh crisp greens, sharp pecorino cheese, pinenuts, and sweet maple dressing this salad is perfect for any meal!

Salad

  • 200g gourmet salad mix
  • 10g fresh basil leaves
  • 10g fresh mint leaves
  • 10g fresh coriander leaves
  • 40g pinenuts, toasted
  • 120g pecorino pepato, with pepper corns

Dressing

  • 60ml extra virgin olive oil
  • 20ml maple syrup
  • 1 (40ml) lime, juiced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Garnish
  • Extra herbs

Method

  1. Wash and dry the salad mix in the OXO Salad Spinner. Repeat the process for the basil, mint, and coriander leaves. Set aside.
  2. In a salad dressing shaker, add olive oil, maple syrup, lime juice, mustard, salt and pepper. Secure the lid and shake the dressing well. Set aside.
  3. With a swivel peeler, peel the pecorino into shavings. Using the OXO Salad Spinner glass bowl to serve add the salad and herbs.
  4. Pour over the salad dressing just before serving with pecorino cheese shavings, pine nuts and seasoning. Serve with herbs on top.
