Cucumber and Honeydew Melon Salad

A delightful and refreshing salad that is rich in vitamin C, helps to boost collagen, and promotes healthy glowing skin.
Serves two.

Ingredients

  • ½ honeydew melon, peeled, seeded, and finely sliced
  • 1 long cucumber, finely sliced into ribbons
  • 125 g (4 oz) cooked edamame beans
  • handful mint leaves
  • 2 limes, juiced
  • 1 teaspoon pure maple syrup
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon matcha green tea

Method

  1. ARRANGE melon and cucumber ribbons onto a serving platter.
  2. SCATTER with edamame beans and mint leaves.
  3. COMBINE the juice of 2 limes with a little maple to sweeten, then drizzle in the olive oil and matcha to form an emerald-green emulsion. Taste and adjust where needed, adding more matcha or maple.
  4. DRIZZLE the dressing over the honeydew and cucumber ribbons before serving.
  5. ENJOY.
